We're going to change the way you think about game.

Because the game season isn't just about hearty and warming casseroles (although there's definitely a place for them!). There are so many different ways you can cook with game meat, like grilling, smoking, slow cooking, and ground meat dishes like meatballs.

And today we're sharing the diversity of game with this Moroccan inspired recipe from @abelandcole.

We're expecting a flock of pheasants to be delivered to the shop, so get in early to recreate this (or any other game dish!) at home.

Ingredients:
1 or 2 whole pheasants (choose according to your desired meat quantity)
Olive oil
8-10 mugs of assorted veggies, cut into chunks
100g butter
Spices: 1 tsp each of ground cinnamon, cumin, and paprika, plus a pinch of ground chili
Sea salt and pepper

Method:
1️⃣ Preheat the oven to 200°C/400°F/Gas 6.
2️⃣ Let the pheasant(s) reach room temperature while prepping the veggies.
3️⃣ Drizzle oil in a roasting tin, add veggies, season, and place in the preheated oven.
4️⃣ Season the pheasant and brown in a pan, then transfer to the oven with the veggies.
5️⃣ Roast the pheasant for around 30 minutes or more, until cooked through.
6️⃣ Rest the bird(s) while the veggies continue roasting.
7️⃣ Melt butter with spices, then drizzle over the veggies and pheasant.
8️⃣ Carve the pheasant and save bones for stock.
9️⃣ Serve with greens, salad, couscous, or rice.

➡️ There's a common misconception that game meat is much stronger than beef but it most cases it isn’t at all and it can have a beautifully earthy flavour.

Heres the secret to the perfect steak. 🥩

Knowing your cut and your timing.

But how do you know whether to flash fry your fillet or roast your rib eye?

Well we're here to help you out with our guide to cooking the perfect steak.

With all the most popular cuts covered these guidelines will have you frying up a feast in no time.

Bavette - Sear on a high heat for 3 mins each side. Slice against the grain.

Cote De Boeuf - Char the marbling in a pan until crispy. Finish quickly in a hot oven.

T-Bone - Cook on a gentle heat for 4-5mins each side. Resting time is essential for this cut.

Flat-Iron - Flash fry for 2-3 mins each side on a fierce heat. Best served rare.

Fillet - Cook quickly for 2-3 mins each side on a high heat. Best served rare.

Rib-Eye - Cook on the hottest heat for 3-4 mins each side. Crisping the fat is the secret to a great rib-eye.

Rump - Cook for 4 mins each side. Best served medium rare. Rest well after cooking.

Sirloin - Cook for 2-3 mins each side. Serve medium rare after resting.

Of course cooking times will vary from cut to cut and depend on the thickness of your steak, but you know we're here to talk you through it when you pop in.
